Vegan Pancake Day 16 February 2010

Get your frying pans out! Vegans can enjoy pancake day too and so can anyone who can't tolerate wheat or gluten-just use an appropriate flour. Here's a couple of recipes to show how; This one is for 2 people and from Patricia Tricker at the Vegan Society One mug of plain flour 1 tsp baking powder One mug soya milk One mashed ripe banana 1 Combine flour and baking powder. 2 Add in soya milk and banana and beat. 3 Fry on both sides and then serve. Second recipe is slight variation on first- add in an extra half mug of flour, add in 3 tbsp soya flour, and leave out banana and soy milk. 1 Flours and baking powder in bowl stir in water til consistency like thick cream. 2 Leave for 30 minutes. 3 If too thick add water, if too runny add flour. 4 Fry on both sides and serve. Send in your pics of your pancakes sprinkled with brown sugar and lemon juice or adorned with soy yoghurt, fruit, maple syrup, chocolate etc etc....and we can stick them up here to show everyone how good the vegan pancake can be.
