Tomato Soup

Tomato soup

Ingredients

  • 500g tomatoes chopped
  • 1 onion chopped small
  • 1 tbsp flour
  • 1 tbsp vegan marg
  • 1 tbsp tomato puree
  • 500ml soya milk
  • 1 bay leaf
  • black pepper to taste

Method

  • 1 Fry onion in marg until becoming transparent
  • 2 Add flour and fry for 1 minute
  • 3 Add tomatoes and bay leaf
  • 4 Cook 10 minutes (keep stirring)
  • 5 Add tomato puree and pepper
  • 6 Add soya milk slowly (keep stirring)
  • 7 Take out bay leaf and whizz up.
  • If too thick thin out with water
